I do love the bold colours! Took me quite a while to notice the scallops under the beetroot slices... Great lighting! I think the foam makes it more lively, but next time, maybe use less? Good job! :thumbsup:

thought about less foam too, but the foam is also used as s auce, so it doesnt get to dry :)

Did you try to capture this dish with a pink foam in the back and more attention to the food creation? Might looks better but I realy should see it to say it for sure. :)
Make sure a plate always in 'dead' middle.

what do you mean with "in dead middle"

I tried to put it in small dots around the scallops, that worked better but didnt have any pictures of it - and im out of scallops :D they are pretty expensive here :/

I get what you are saying. I think the beetroot foam is too light compared to everything else on the plate. They are bold, solid colors and shapes. Maybe it's a texture thing, too.

well it's nice texture wise, since it work as a light sauce - however I just don't like it on pictures, its better without it (:
